Oils can be refined or extra-virgin. The less refined the better. Refined oils go through a process where they accumulate plenty of toxins that affect and damage organs like the liver and the kidneys.
They also should be cold-pressed. That preserves their nutrients and are much healthier.
Sesame oil and flaxseed oil have to be consumed around the first 3 weeks, they don’t last longer than that (they go rancid). And the first one cannot be used for frying as it turns toxic with te process. Put them away from the sun and save them in a dry place.
It is preferable to use any of the oils mentioned above instead of animal products like lard or butter, especially for frying. Frying is not recommended, if you do so, do it at a very low temperature and very quickly.
